5 Healthy & Easy Recipes to Have in Your Dorm Cooking Arsenal
By Megan O’Connell, Student at UW-Platteville
Spring semester is upon us. We are far enough into the semester that the starting point is no longer visible, yet the end is nowhere in sight.
The resolutions we made in January are getting more difficult to keep due to stress brought on by overwhelming amounts of coursework, meetings, rush events, sports practices and a social life. With this in mind, it is the perfect time to ensure you have five healthy dorm room recipes in your arsenal.
You will be thankful for these quick, healthy and delicious dorm room recipes on your busiest days!
I’m only contributing one of these recipes because I figured whom better to go to for recipes than girls just like myself and just like you? Whether they live or have lived in the dorm rooms, we have all endured cooking in awkward living conditions and know how to make the most of it.

Cheese Quesadilla
Submitted by Katie Peters, Student at UW-Platteville

Place shredded cheese in the middle of a soft tortilla shell. Fold in half and place in microwave for 30 to 60 seconds. Cut into thirds and dip in sour cream, taco sauce, salsa or guacamole! This is the perfect dorm room dinner.
Caesar Salad
Submitted by Alycia Riehl, Student at UW-Platteville
Ingredients:
Lettuce
Parmesan cheese
Caesar dressing
Croutons
Additional veggies of your choice
Directions:
Layer your ingredients on top of your lettuce. A salad seems like a no-brainer, but this great meal can be eaten for lunch or dinner. Plus, it’s a cheap and healthy meal. The ingredients won’t take up much room in your tiny dorm fridge. Salads are great because since the lettuce goes bad quickly, you know you have to eat it within the week!
Homemade Mac & Cheese
Submitted by Rachel Schneider, Student at UW-Platteville
Ingredients:
1.5 cup noodles cooked
1/3 cup shredded sharp cheddar
If desired:
2 tablespoons of bacon bits
Several Pickles
Directions:
Cook noodles in boiling water until done. Strain the noodles. Next, add the shredded sharp cheddar and bacon bits and pickles. Stir and enjoy! This recipe is great to enjoy a nice homey meal, especially if you have a small kitchen available in your dorm. If not, you can make the noodles in the microwave!
