5 Healthy Summer Recipes for the Girl on the Go

Summer is kicking off, and many of us are looking for quick and healthy snacks to eat throughout the busy summer days. Whether you are looking for a lunch to take to work or a snack to bring to the beach, you'll want something that is both easy to make and won't cost you too many calories.
When looking for quick foods, we normally turn to foods that aren’t good for us like fast food. However, with a little preparation, it is easy to avoid junk food. Here are five healthy recipes that you can eat at home or on the go!
Egg Salad (~ 6 servings)
Ingredients:
- 6 boiled eggs
- ½ avocado
- ½ cup plain Greek yogurt
- ½ cup diced veggies of your choice (I used celery and radishes)
Directions:
Peel boiled eggs. Dice the eggs, avocado and veggies. Combine all ingredients in a bowl and mix well. Serve on bread, tortillas or enjoy plain!
Cookie Dough Fro Yo (~ 1 serving)
Ingredients:
- 6-8 oz. plain Greek yogurt
- 1 tablespoons peanut butter
- 1 teaspoon honey
- ½ teaspoon vanilla extract
- 2 tablespoons mini chocolate chips
Directions:
Combine all ingredients in a small bowl. Stir. Place in freezer for at least one hour. Enjoy!
Frozen Grapes (10+ servings)
Ingredients:
- 1 bunch of grapes
Directions:
Place a bunch of grapes in the freezer. Whenever you need a snack, grab a bundle off and enjoy these icy treats!
Caprese Kabobs (~ 6 servings)
Ingredients:
- 1 container cherry tomatoes (around 20 cherry tomatoes)
- 2 cups fresh basil leaves
- ½ block mozzarella cheese
- Kabob skewers
Directions:
Cut your half a block of mozzarella cheese into cubes. In typical kabob fashion, put a tomato on your skewer, then two basil leaves, a cube of mozzarella and repeat! There’s no need to cook these kabobs, just eat them fresh!
Trail Mix
Ingredients:
- ½ box Honey Nut Cheerios
- ½ bag of pretzel sticks
- 8 oz. dark chocolate chips
- 8 oz. dried cranberries
- 16 oz. almonds
Directions:
Combine all your ingredients into a large Tupperware container. Creating your own trail mix is a great way to ensure you have a healthy snack on hand at all times!
