Coaches’ Wives Recipes: Game Day Stew

In the early 90s, I decided to go back to college and get my degree.  In the process, I made became fast friends with a lot of the younger students who were in my program.  Upon graduation, I was sitting between two fellow classmates, and as I walked across the stage to get my diploma the president of the university stood up and gave me a hug.  When I returned to my seat, John, my fellow classmate, asked me why the president was so affectionate.  I replied that we had been friends for many years.  John then said with excitement, “Edwards, Edwards, is your husband LaVell Edwards?”  I replied, “Yes.”  John poked Mike (the other student sitting next to us) and said, ” Do you know who Pat’s husband is?”  Mike shook his head no. John informed him, “LaVell Edwards is her husband.”  John looked at both of us and replied, “Who is LaVell Edwards?”  It was then that I realized that I’d made a name for myself all on my own, and somehow I’d actually managed to make it through without riding on my husband’s coat tails.

Game Day Stew,  by Pat Edwards

l pound of stew meat
4 cubed carrots
4 cut up potatoes
l pkg. of dried Lipton Onion Soup Mix
2 cans of Cream of Mushroom soup
l/2 cup of water.

Brown stew meat.  In a heavy pan put all of the ingredients together.  Stir well and bake in a slow oven at 250 degrees for five or six hours.  I would put the stew in the oven before I left for the game.  When my family and would come home after the game our meal was prepared.  (Yummy!)  It’s is a delicious tradition.
